Many Indonesian coffees—especially classic lots from Sumatra and Sulawesi—are described as herbal, spicy, earthy, cedar-like, syrupy, or low in bright acidity. Wet-hulling can contribute to that style, but it is not a flavor button.

Wet-hulling, called giling basah in Indonesia, means removing the parchment layer while the coffee is still much wetter than conventionally dry-hulled parchment coffee. The exposed green beans are then dried again to a stable final moisture before grading, storage, export, roasting, and brewing.

That early removal changes the bean's physical protection, drying path, and handling risk. It is associated with the heavy body and savory aromatic range many drinkers recognize. Yet region, species, variety, cherry ripeness, fermentation, drying speed, sorting, storage, roast, and brewing all remain important.

Three rules prevent most misunderstandings:

  • Wet-hulled does not mean the finished green coffee stays wet. High moisture belongs to an intermediate stage; final drying still matters.
  • Herbal or earthy does not automatically mean defective. Clean cedar, dried herbs, cocoa, warm spice, and forest-floor associations can be desirable. Musty, moldy, dirty, phenolic, or baggy character is different.
  • Not all Indonesian coffee is wet-hulled. Fully washed, natural, pulped-natural or honey-like, dry-hulled, and experimental lots also exist, across both Arabica and Robusta.

The table is a hypothesis builder, not an authentication tool. A carefully made wet-hulled coffee can be cleaner than a badly dried fully washed coffee. A light-roast wet-hulled lot can be brighter than a dark-roast washed lot.

“Wet process” and “wet-hulled” are not the same

Coffee terminology becomes confusing because several processes use water.

In a conventional fully washed process, the cherry skin is removed, mucilage is fermented off or mechanically removed, the coffee is washed, and the seed dries inside parchment. Only after the parchment coffee reaches stable moisture is that protective layer dry-hulled.

In wet-hulling, the early steps may also include pulping, short fermentation, washing, and partial drying. The defining step comes later: parchment is removed while it is still soft and the seed still contains far more moisture than export-ready green coffee.

The market term semi-washed is ambiguous. Some Indonesian researchers and traders use it for wet-hulled chains. In other countries, it can describe pulped-natural or honey-like processing where mucilage dries on the parchment. If a bag says only semi-washed, ask whether the parchment was hulled early at high moisture.

Giling basah is usually the clearest process phrase when the seller has applied it accurately.

The moisture ranges in the diagram are operational ranges reported in specific Indonesian chains, not a universal recipe. Equipment, region, weather, ownership, and buyer requirements can change the exact numbers.

How giling basah works, step by step

1. Coffee cherries are picked and sorted

Ripe-cherry selection remains fundamental. Wet-hulling cannot repair underripe, overripe, diseased, or ground-collected fruit. Some supply chains use selective picking and flotation; others contain more mixed ripeness and require heavier sorting later.

2. Cherries are pulped

The skin and much of the fruit are mechanically removed, often close to the farm. The result is parchment coffee still coated with mucilage.

Small pulpers can create their own physical defects if poorly adjusted. Beans of different sizes, debris, and worn components raise the risk of nicks or crushing before wet-hulling even begins.

3. Mucilage is loosened and removed

The coffee may rest or ferment overnight, then be washed. A North Sumatra/Aceh process description from specialist trader Matahari Global Trading reports roughly 12 hours as a common example.

That is not a legal recipe. Fermentation time depends on temperature, mucilage, water, vessel, microbial activity, and local practice. The important point is that cherry processing and parchment hulling are separate decisions.

4. Parchment coffee is only partially dried

Instead of drying all the way to conventional storage moisture, parchment may be dried to roughly 35–40% moisture in the Matahari example. At this stage, it may move from farmer to collector, cooperative, or mill.

The handoff matters. A buyer now controls a product that is still biologically and physically vulnerable. Time, shade, rain, pile depth, bags, cleanliness, and airflow can change the result before the huller starts.

5. The parchment is wet-hulled

The soft parchment is mechanically removed. An FAO North Sumatra trial used a local screw huller modified to process parchment at 35–45% moisture, compared with the machine's original dry-parchment design range of 11–14%.

The exposed seed is softer, larger, and easier to mark than a dry green bean. Wet-hulled green coffee may show a mottled or blue-green appearance. Appearance alone does not establish cup quality, but severe crushing, cuts, parchment remnants, or uneven color can signal control problems.

6. Exposed green coffee is dried, graded, and sorted

Wet-hulling is not the end. The beans must be dried promptly to stable final moisture, then graded and sorted. Matahari describes patio drying to about 12%, followed by gravity sorting, destoning, optional color sorting, and repeated hand sorting.

The FAO trial also brought wet-hulled beans to 12% in its controlled treatments. An ICO moisture review reported a 12% maximum for Indonesian wet-processed coffee in the cited national framework.

Those figures correct a common myth: giling basah is early hulling, not permission to export unstable wet coffee.

Why the method makes sense in Indonesia

The usual one-sentence answer is “because Indonesia is humid.” Humidity and rainfall matter, but they are only part of the system.

Faster final drying

Removing parchment exposes more of the seed and can accelerate moisture loss during the final stage. That reduces the time a mill needs to prepare green coffee for grading and sale when long, uninterrupted dry-weather windows are scarce.

Smallholder production and limited drying space

The 2025 USDA Indonesia Coffee Annual reports that smallholders averaging roughly one to two hectares account for about 98% of coffee area. Individual farms may not have enough patios, raised beds, covered structures, moisture meters, labor, or cash flow to hold and finish every lot.

Partial drying allows coffee to enter a collector, cooperative, or mill chain sooner. The mill can consolidate volume, hull, finish drying, sort, and prepare export lots.

Cash flow and custody

Coffee at intermediate moisture can be sold earlier than fully dried parchment. That changes who carries drying time, weather risk, shrinkage, and working capital.

This economic explanation is essential. Giling basah is not merely an exotic flavor tradition. It is a coordinated way to move physical coffee through a particular production and trade structure.

A process adapted to a place, not proof of one flavor

Humid weather and fast movement help explain why the process became practical. They do not prove that humidity itself becomes a cedar note. Sensory character emerges later from interacting biological, physical, and roasting variables.

What controlled evidence says about flavor

Two technical projects provide a more useful answer than a flavor slogan.

The FAO trial could not manufacture one “Mandheling character” on command

The FAO study produced 42 samples from six North Sumatra sources and applied seven processing/storage treatments. Four experienced commercial companies blind-tasted the coffees.

The researchers could not consistently replicate Mandheling character with one process group or one source group. Tasters also disagreed about the definition: one sample was rated strongest in Mandheling character by three tasters and weakest by another.

The report judged wet-hulling integral to the system but said its exact mechanism was unclear and other factors were involved.

That finding should change the way tasting notes are written. It supports:

  • “wet-hulling can contribute to classic Mandheling associations”;
  • “the process changes the likelihood of certain textures and aromatics”;
  • “mill practice and handling matter.”

It does not support:

  • “wet-hulling always creates herbal coffee”;
  • “all Sumatra tastes the same”;
  • “earthiness proves the origin.”

Eastern Indonesia trials show that wet-hulled can be clean and preferred

The ACIAR/ICCRI report What Makes a Cup of Coffee Special? compared processing, varieties, and locations in Flores and Sulawesi.

In four Sulawesi location comparisons, the average scores from 17 cuppers were 1–2 points higher for wet-hulled coffee than for full-washed coffee from the same location. Panel preference patterns were less uniform, and altitude effects were inconclusive. In Flores, carefully controlled pulped-natural coffees were most preferred overall.

The correct conclusion is not that wet-hulled is best. It is that wet-hulling can produce legitimate specialty quality, and preference depends on the full coffee and the people tasting it.

Why herbal, spicy, earthy, and heavy-body notes appear

These words describe perception. They are not ingredient lists and rarely identify one molecule or one cause.

Heavy or syrupy body

Wet-hulled coffees are often described as coating, round, dense, or syrupy. Processing can change bean structure and the balance of soluble and suspended material perceived in the brew. Roast development, brew ratio, metal filtration, grinder fines, and immersion brewing can amplify the sensation.

Body is not the same as strength. A coffee can have a coating texture without an unusually high dissolved-solids concentration.

Lower or softer perceived acidity

Classic wet-hulled lots are often less sharply citrus-like than bright fully washed coffees from some other origins. Low acidity on a product page usually means lower perceived brightness, not an absence of organic acids or a laboratory pH claim.

Dark roasting and concentrated brewing can suppress the perception of origin acidity even further. A light, clean wet-hulled coffee may still show apple, orange, tamarind, or tropical-fruit acidity.

Herbal and woody associations

Descriptors may include dried herbs, cedar, sandalwood, fresh tobacco, tea, resin, pine, or savory greens. These associations can sit inside a sweet, clean structure with cocoa, caramel, fruit, and spice.

The scientific evidence available here does not isolate a single wet-hulling reaction that reliably produces “herbal.” Use the word as a cupping observation, then check whether the cup remains clean and pleasant as it cools.

Warm spice

Spicy often means cinnamon, clove, pepper, nutmeg, or baking-spice associations—not actual added spice. Roast-derived aromatics, variety, fermentation history, and retronasal perception can all contribute.

If flavorings or co-fermentation ingredients were used, the seller should disclose them separately. Giling basah by itself does not mean anything was added.

Earth and forest floor

A restrained fresh-earth or forest-floor association can be part of a complex clean coffee. The word becomes dangerous when it hides damp-basement, mold, dirty sack, rotting wood, or phenolic sensations.

The name of a pleasant image does not rehabilitate a defect.

Desirable or acceptable character may include

  • cedar, sandalwood, or clean wood;
  • dried herbs, black tea, or tobacco leaf;

  • cocoa, dark chocolate, caramel, or palm sugar;
  • fresh earth or forest floor in balance;
  • ripe fruit, dried fruit, citrus, or tamarind;
  • round, coating, syrupy body;
  • clean sweetness and a long structured aftertaste.

Warning signs include

  • musty or moldy odor that strengthens as the coffee cools;
  • damp cardboard, cellar, dirty sack, or stagnant-water character;
  • sharp phenolic, medicinal, or chemical notes;
  • sour fermentation without sweetness or structure;
  • baggy, faded, woody staleness;
  • inconsistent cups from the same bag;
  • severe quakers, broken beans, insect damage, or foreign matter in the roasted sample.

The FAO North Sumatra work found that longer storage of wet parchment increased mould infection and musty flavors. Ochre-group fungi appeared in five of six wet-parchment samples stored for two weeks, and some final samples contained low levels of ochratoxin A.

The study's practical conclusion was not to abandon wet-hulling. It was to move quickly: ferment and wash cleanly, wet-hull without prolonged wet storage, then dry the exposed green beans rapidly and safely.

Physical damage is another risk

A soft wet bean can be cut, crushed, or left with parchment if huller settings are poor. A Gayo study of semi-washed processing linked part of its defect count to broken beans and parchment remaining after high-moisture hulling.

That does not make every mottled wet-hulled bean defective. It makes sorting and machine control visible parts of quality.

Other processes also have risks

Natural coffee can mold or over-ferment. Fully washed coffee can be phenolic, sour, mechanically damaged, or badly dried. Honey-like coffee can dry unevenly. A Java comparison of physical and sensory quality found fewer defects in its wet-processed samples than dry-processed samples and better outcomes with mechanical drying.

Process labels describe routes, not moral rankings.

Indonesia is larger than the classic Sumatra profile

The Indonesian archipelago contains many coffee systems. Treating them as one flavor erases useful differences.

Species comes first

USDA estimated that Robusta represented roughly 80–90% of national production in its 2025/26 forecast, concentrated heavily in southern Sumatra. Northern Sumatra is the main Arabica area, with smaller high-altitude Arabica production in Java, Sulawesi, and Papua.

A southern-Sumatra Robusta, a Gayo Arabica, and a Toraja Arabica differ before processing begins. Species changes caffeine, bitterness, aroma potential, structure, agronomy, and market use.

Island and smaller origin matter

  • Aceh/Gayo: can range from classic wet-hulled cocoa, herb, spice, and body to very clean fruit-forward specialty lots.
  • North Sumatra: Lintong and other localities may appear under Mandheling trade programs; Mandheling is not one precise farm coordinate.
  • Sulawesi: Toraja and Enrekang coffees can combine spice, fruit, cocoa, and structured acidity; both wet-hulled and other processes occur.
  • Java: estate and smallholder systems include fully washed, natural, and other processing traditions as well as wet-hulled examples.
  • Bali, Flores, and Papua: process, variety, and market program vary; a country label cannot predict them.

The best bag narrows the location beyond Indonesia or even Sumatra.

Variety matters

The ACIAR/ICCRI work included Typica, S795, and Hibrido de Timor in Flores. World Coffee Research describes S795 as a high-yielding, large-bean variety developed from S288 and Kent. Indonesia also contains Timor/Catimor-related material, Typica selections, local names, and mixed plantings.

Wet-hulling does not erase genetics. A variety claim should be read separately from the process and verified to the level the supply chain can honestly support.

How roast changes the “Indonesian” impression

Classic Indonesian coffees are often sold at medium-dark or dark roast. That commercial history can reinforce the stereotype.

A darker roast may emphasize

  • dark chocolate and caramelized sugar;
  • smoke and roast spice;
  • bitterness;
  • heavy body;
  • lower perceived brightness;
  • reduced distinction between fruit, herb, wood, and roast character.

A lighter roast may reveal

  • more fruit and floral aromatics;
  • clearer acidity;
  • herb or spice separated from roast smoke;
  • the difference between clean earth and actual mustiness;
  • more obvious lot-to-lot variation.

Neither roast level is automatically correct. The key is not to attribute a dark-roast flavor to wet-hulling without checking the roast.

How brewing changes body and spice perception

For a cleaner, more separated cup

  • Use a paper-filtered pour-over.
  • Begin around 1:16 coffee-to-water.
  • Use moderately mineralized water and avoid excessive alkalinity.
  • Grind to complete the brew without stalling.
  • Let the coffee cool before judging acidity, herbs, and defects.

For a rounder, heavier cup

  • Use French press, AeroPress with a metal filter, or another immersion method.
  • Begin around 1:15.
  • Extend contact time carefully rather than grinding extremely fine.
  • Decant fully so the coffee does not continue extracting on the grounds.

For espresso

  • Expect roast and blend design to matter at least as much as origin.
  • A wet-hulled component can add body, cocoa, and savory depth.
  • Avoid diagnosing the bean from a sour or bitter shot before dialing in grind, yield, temperature, and time.

Compare recipes by taste, not by forcing every Indonesian coffee into a low-temperature or coarse-grind rule.

How to read an Indonesian wet-hulled coffee bag

1. Process wording

Look for wet-hulled, giling basah, or an explanation that parchment was removed at high moisture. Treat semi-washed as a question, not a complete answer.

2. Species

Is it Arabica, Robusta, or a blend? National production statistics cannot answer for your bag.

3. Island, province, and smaller locality

Indonesia is broad. Sumatra is still broad. Aceh Tengah, Bener Meriah, Lintong Nihuta, Toraja, Enrekang, or another smaller place provides more repeatable context.

4. Producer, cooperative, collector, or mill

Wet-hulled coffee often moves through multiple hands. A cooperative or mill can be more stable and meaningful than an invented single-farm narrative.

5. Variety information

S795, Typica, Catimor/Timor-related material, local selections, or mixed varieties should appear separately from the regional name. Honest mixture is better than unsupported precision.

6. Fermentation and washing

Wet-hulling does not tell you fermentation time, water use, mucilage removal, or whether an experimental treatment occurred. Read those fields separately.

7. Drying and final moisture

Strong transparency may include drying surface, weather protection, mill, moisture, water activity, or sorting details. Not every retail bag can fit them, but a roaster should be able to explain its green-coffee quality controls.

8. Harvest, lot, arrival, and roast date

These identify the physical coffee. A permanent origin story without a crop or lot may describe a sourcing program, not the current bag.

9. Tasting notes

Use herbal, spice, earth, cocoa, fruit, and body notes as testable guidance. They are not proof of processing or origin.

Which style should you buy?

Choose a classic wet-hulled style when you want

  • coating body;
  • cocoa, cedar, tobacco, herbs, and warm spice;
  • a savory-sweet profile;
  • softer perceived brightness;
  • a coffee that can stand up to milk or an espresso blend.

Look for cleanliness and sweetness, not merely a long list of dark descriptors.

Choose a cleaner contemporary wet-hulled lot when you want

  • the texture and spice associations of giling basah;
  • clearer fruit and acidity;
  • named cooperative, mill, or locality;
  • more information about rapid drying and sorting;
  • a light-to-medium roast that exposes quality.

Choose fully washed Indonesian coffee when you want

  • more conventional washed clarity;
  • easier comparison with washed coffees from other origins;
  • brighter separation of acidity and fruit;
  • less emphasis on the classic wet-hulled profile.

Choose natural or pulped-natural Indonesian coffee when you want

  • more fruit-driven fermentation expression;
  • a different texture and sweetness pattern;
  • an opportunity to separate island character from wet-hulling.

Remember that the ACIAR/ICCRI Flores work found carefully controlled pulped-natural coffee highly preferred. Tradition is not the only route to quality.

A fair home experiment: wet-hulled versus fully washed

The best comparison controls the variables that usually ruin origin experiments.

Buy two coffees that match as closely as possible

  • same island or nearby origin;
  • same species;
  • same variety or honest mixed-variety status;
  • similar crop and green age;
  • similar roast date and roast level;
  • similar quality and price tier;
  • one explicitly wet-hulled and one explicitly fully washed.

Brew them the same way

  1. Use the same dose, ratio, grinder, water, brewer, and temperature.
  2. Smell dry grounds before reading the tasting notes again.
  3. Taste hot, warm, and cool.
  4. Record sweetness, acidity character, body, finish, cleanliness, herb, wood, spice, cocoa, and fruit.
  5. Mark any musty, sour, phenolic, or baggy signs separately from positive descriptors.
  6. Repeat on another day.
  7. Change only one brewing variable if you want to test body or clarity.

One pair cannot define Indonesia. It can teach you what process does within a useful controlled comparison.

Start with the process. Then keep reading until the bag identifies the species, smaller place, people, variety, fermentation, drying, crop, lot, and roast behind the herbal or spicy impression you actually tasted.
