Coffee cupping is a side-by-side tasting method: prepare every coffee with the same vessels, ratio, grind, water, and timing, then compare what changes in the cup. You do not need a laboratory or a professional score sheet to learn from it. You do need consistency.

That recipe follows the current Specialty Coffee Association mechanics, with one important simplification: formal affective assessment uses five cups per sample, while descriptive cupping uses three to five. One bowl per coffee is useful for home learning, but it cannot reveal cup-to-cup inconsistency.
The current SCA method, not the old 2004 form
Many online cupping guides still reproduce the 2004 SCA protocol and its familiar 100-point form. The SCA's current published framework is the Coffee Value Assessment (CVA). SCA-102-2024 covers sample preparation and tasting mechanics; SCA-103-2024 covers descriptive assessment. SCA-102 states that it supersedes the 2004 protocol.
The mechanics remain recognizable: weigh, grind, smell, pour, leave a crust, break, skim, cool, and taste. The larger conceptual change is valuable at home: describe what you perceive separately from whether you like it. What you need for home coffee cupping
- Two or three whole-bean coffees

Official SCA cupping vessels are tempered glass or ceramic, hold 200–350 mL, measure 75–90 mm across the top, and are identical within the session. At home, matching ceramic cereal bowls or wide mugs can work. What matters most is that they share the same material, shape, and capacity.

Avoid strongly scented soap, candles, cooking aromas, perfume, and flavored water. You are trying to compare coffee, not the room.
Coffee cupping ratio: calculate from bowl capacity
The SCA formula is:

Measure capacity by placing the empty bowl on the scale, taring it, filling it to the rim with room-temperature water, and reading the grams. Water is close enough to 1 gram per milliliter for this kitchen measurement.

Weigh every dose separately. Do not weigh one large pile and divide it by eye: a small dose error can change extraction and make one coffee seem unfairly stronger.
Coffee cupping grind size and water
The formal grind target is slightly coarser than typical paper-filter drip coffee. SCA-102 describes approximately 70–75% of the particles passing through an 850 µm screen. Most homes do not own laboratory sieves, so use a visibly coarse, even grind—coarser than your normal V60 setting but not chunky like the coarsest French-press cliché—and keep the grinder unchanged across samples.
Grind each dose separately as close to brewing as practical. Purge a small amount of the next coffee before grinding it so that retained grounds do not mix samples.
Use the same water for every bowl. SCA-102's working range, when possible, is chlorine-free water with calcium hardness of 50–175 ppm as CaCO3, alkalinity near 40–70 ppm as CaCO3, and pH 6–8. You do not need to test a kitchen supply before your first session, but avoid distilled water, heavily softened water, strongly chlorinated tap water, or mineral water with an obvious taste.
How to cup coffee at home, step by step
1. Code the coffees and synchronize the setup
Label the bowls A, B, and C. Ask someone else to match the bags to the letters, or write the key and turn it face down. This does not make the test perfectly blind, but it keeps price, origin stories, and package claims out of your first notes.
Arrange the bowls in one line, put the correct weighed beans beside each, and prepare enough water to fill every bowl without a long pause. If one sample is brewed several minutes after another, cooling time becomes another variable.
2. Grind and smell the dry fragrance
Grind A into bowl A, then purge and repeat. Before adding water, smell each bowl. Write one or two observations under dry fragrance. Broad words such as sweet, nutty, cocoa-like, fruity, floral, roasted, spicy, green, or earthy are useful. Precision can come later.
3. Pour 93 ± 3°C water to the rim
Start the timer with the first pour. Wet all the grounds and fill each bowl to the measured rim. Move at a steady pace so the samples begin brewing close together. Do not stir now; a floating layer of grounds—the crust—should form.

If your kettle boils without temperature control, let it settle briefly, check with a thermometer if available, and stay within 90–96°C. Do not rely on a fixed “wait 30 seconds” rule because kettle volume, material, room temperature, and altitude change the cooling rate.
4. Leave the crust undisturbed for 3–5 minutes
Smell near the bowls without moving them. The current standard allows the break anywhere in this window. Pick one time—four minutes is convenient—and use it for every sample.
5. Break the crust and smell the wet aroma
At your chosen time, bring your nose near bowl A. Push the back of the spoon through the crust and stir approximately three times. Smell the vapors released during that movement. Rinse the spoon in clean hot water, then repeat for B and C.
6. Skim the floating grounds and oils
After every crust is broken, use one or two spoons to lift away floating grounds and foam. Discard them into the waste cup. Skimming is not a race, and you do not need a perfectly spotless surface; remove enough material that you can later take liquid without chewing grounds.

If several people are tasting, a sanitary option from SCA-102 is to use a designated spoon for each sample to transfer coffee into a personal vessel. Always rinse a spoon in hot water before it goes back into a shared bowl.
7. Cool to about 70°C before tasting
Freshly poured cupping bowls are too hot for safe, detailed tasting. The SCA method begins liquoring around 70°C. A thermometer helps; otherwise wait until a cautious spoonful is comfortably hot rather than burning.
8. Slurp, compare, and return as it cools
Take a small spoonful and slurp enough to spread the liquid across your tongue and palate. You do not need theatrical volume. The purpose is distribution and aeration, not performance. Spit into a personal cup if you are tasting many samples or limiting caffeine; otherwise swallow small amounts.

Taste A, then B, then C. Repeat at least three rounds as the coffee moves from hot to warm to near room temperature. Record what changes. Acidity may become clearer, sweetness may emerge, bitterness may linger, and aftertaste can become easier to separate from the first flavor impression.

Start with categories. The World Coffee Research Sensory Lexicon contains 110 attributes and can help trained tasters calibrate language, but a beginner does not need to name all of them. “Fruity, medium intensity, more citrus-like as it cools” is a useful note. “Tastes expensive” is not a sensory description.

Pass 2: record your response
Only after the descriptive pass, add:
- Do I like this coffee?
- Which observed quality drives that response?
- Would I choose it for black filter coffee, with milk, or not again?
- Is the problem likely to be the bean, or should I retry the brew with a different grind?
This distinction matters. The SCA's current descriptive standard states that intensity does not imply quality or desirability. A coffee can be intensely floral and excellent by professional criteria while still reminding you of soap. Another taster can perceive the same floral character and love it. Peer-reviewed research on individual variation in coffee perception and preference is another reason to compare observations before arguing about the one correct favorite.
Common home cupping problems
Every coffee tastes bitter
Let the bowls cool further before deciding. If bitterness remains dominant in every sample, check whether the roast is very dark, the grind is too fine, the dose is too high, or the water is unusually hot. Change only one variable in a repeat session.
Every coffee tastes sharply sour
Make sure the water was hot enough, all grounds were saturated, the dose followed bowl capacity, and the grind was not extremely coarse. “Sour” can also describe a real coffee characteristic; compare intensity, mouth-drying sensation, sweetness, and aftertaste before diagnosing a defect.
Grounds keep entering the spoon
Skim more carefully and dip the spoon just below the surface. A few particles are normal. Do not filter the bowls after brewing; filtration changes texture and moves the comparison away from cupping.
I cannot name any flavors
Use contrasts instead of nouns. Which sample is sweeter, brighter, heavier, more roasted, more drying, or longer in aftertaste? Comparative language is real progress. Specific associations usually become easier with repeated tasting and familiar reference foods.
One bowl cools much faster
Check whether the vessels are truly identical, filled to the same level, and placed away from drafts or cold surfaces. Vessel material and mass affect heat loss, which is why matching bowls matter.
A better first session
Choose coffees with an obvious contrast: perhaps one washed light roast, one natural-process light roast, and one medium or dark roast. The goal is not to prove which is best. It is to connect physical differences in the cup with reliable language.
Keep the first session under an hour. Reveal the bags after your descriptive and preference notes are complete. Then ask whether the label's tasting notes match anything you observed—not whether you failed if they do not.
