Coffee Varieties Explained: Typica, Bourbon, Caturra, SL28, and Geisha

Typica, Bourbon, Caturra, SL28, and Geisha are names for coffee plants, not roast levels, processing methods, or brewing styles. More precisely, they are cultivated varieties or genetic groups within Coffea arabica.

Those names matter. Genetics can influence tree stature, yield, disease response, ripening, bean size, and quality potential. But a variety name is not a flavor guarantee. The coffee in your cup is better understood as:

genetic potential x environment x farm management x ripeness x processing x storage x roast x brewing

That formula explains why two Bourbon lots can taste unrelated and why an accurately labeled Geisha can still disappoint. Learn the lineage, then judge the complete lot.

The five coffee varieties at a glance

The map is deliberately simplified. Typica and Bourbon belong to a historically narrow cultivated Arabica group. Caturra is directly tied to Bourbon as a natural mutation. SL28 is a selected East African cultivar with a Bourbon-like genetic background, not merely a Bourbon child in the same sense. Panama Geisha T2722 follows a separate Ethiopian-landrace route.

First, separate species, variety, origin, and process

Coffee labels stack several kinds of information, and confusing them leads to bad predictions.

  • Species: Coffea arabica and Coffea canephora are different species. Robusta is the common market name for much C. canephora coffee.
  • Variety or cultivar: Typica, Bourbon, Caturra, SL28, and Panama Geisha are plant identities within Arabica. In everyday coffee language, variety is the usual umbrella term.
  • Origin: Kenya, Panama, Huila, Boquete, a farm, or a plot identifies where the coffee grew.
  • Process: Washed, natural, honey, or a defined fermentation method describes what happened after harvest.
  • Roast: Light, medium, or dark describes heat treatment by the roaster.
  • Flavor: Jasmine, blackcurrant, caramel, or cocoa describes a sensory impression, not the plant's legal identity.

Typica: a foundation carried around the world

Typica is one of Arabica's most historically important cultivated groups. World Coffee Research traces it from Ethiopia to Yemen, then through India and Java. A plant reached Amsterdam's botanical garden in 1706, and descendants moved through European colonial routes into the Caribbean and the Americas.

That history created influence and a genetic bottleneck. A small number of transported plants became the base of enormous production areas. WCR describes Typica as tall, low yielding, susceptible to major diseases, and capable of very good cup quality at high altitude.

You may see related names such as Criollo, Arabigo, Plume Hidalgo, Sumatra, or Jamaica Blue Mountain. Those names carry local history, but they are not permission to assume that every population is genetically identical or grown under equivalent conditions.

For a buyer, Typica suggests a meaningful lineage with quality potential. It does not predict one universal clean, sweet, or floral profile. Ask for the farm, location, harvest, process, and roast before attaching tasting notes.

Bourbon: a second foundational route

Bourbon did not simply replace Typica as a better version. It followed a different historical route from Yemen to Bourbon Island, now La Reunion, in the early 1700s. It later spread into Africa and reached Brazil around 1860 before moving through parts of Latin America.

The WCR Bourbon entry describes a tall plant with medium yield potential, very good high-altitude quality potential, early ripening, and susceptibility to major diseases. Bourbon also became a parent or genetic background for many later selections and mutations.

The 1922 photograph provides historical context, not modern genetic verification. That distinction matters because Bourbon-like, Bourbon-related, and the distinct Bourbon variety are not always interchangeable. WCR notes that East African Bourbon-like populations do not necessarily match the Bourbon found in Latin America.

Red Bourbon, Yellow Bourbon, and local Bourbon selections may deserve separate lot descriptions. Color alone does not prove identity, and a famous family name does not erase farm-level variation.

Caturra: Bourbon made compact by mutation

Caturra gives the cleanest parent-child relationship in this group. WCR identifies it as a natural mutation of Bourbon, discovered in Minas Gerais, Brazil, sometime between 1915 and 1918. A single-gene mutation makes the plant compact.

Compact stature changes farm economics. Trees can be planted more densely, field work can be easier, and more productive branches can fit into a given area. The same system can demand more nutrition and more intensive management. In WCR's reference framework, Caturra has medium yield potential per plant, good high-altitude quality potential, high nutrition needs, and very high susceptibility to coffee leaf rust.

This is why better variety is the wrong question. A compact plant may be operationally valuable even when another variety has higher theoretical cup potential. The producer must balance land, labor, fertilizer, shade, rainfall, disease pressure, and market access.

Caturra can produce excellent specialty coffee. Its market name is simply less theatrical than Geisha. Treat that as a lesson: fame and quality are related through markets, not through a perfect biological ranking.

SL28: a Kenyan selection, not a flavor shortcut

SL28 was selected at Scott Agricultural Laboratories in Kenya during the 1930s. The letters refer to the laboratory's selection series, not to a sensory score. WCR traces it to a tree in a population called Tanganyika Drought Resistant and describes its background as Bourbon-like.

The WCR SL28 profile lists a tall plant, large beans, low yield potential, exceptional high-altitude quality potential, drought tolerance, and susceptibility to major coffee diseases. Some old SL28 trees in Kenya have remained productive for decades, but rusticity is not immunity from poor soil, disease, or climate stress.

Well-produced Kenyan SL28 is often associated with vivid acidity and fruit character, including blackcurrant-like descriptions. Those are useful expectations for some lots, not diagnostic tests. SL28 is now grown outside Kenya, and Kenya also grows other varieties. A cup cannot reliably prove both origin and genetics by taste alone.

Panama Geisha: exceptional potential, complicated identity

The celebrated Panama Geisha line is an Ethiopian landrace selection. WCR records that material collected in Ethiopia in the 1930s moved to Tanzania's Lyamungu research station, then to CATIE in Central America, where it was recorded as accession T2722. It reached Panama in the 1960s and became famous after a Boquete competition lot attracted extraordinary attention in 2005.

The WCR Panama Geisha profile assigns it exceptional quality potential at high altitude, along with tall stature and low yield potential. Carefully managed lots are associated with delicate floral, jasmine, peach, and tea-like expressions.

The important word is potential.

WCR also warns that multiple genetically distinct plant types have been called Geisha. A seller using that name may mean Panama Geisha descended from T2722, another Ethiopian accession, or a locally selected population. The shared name does not make them genetically identical.

Geisha and Gesha are both established spellings. Geisha follows the historical germplasm records; Gesha reflects a common English rendering of the Ethiopian place name. Spelling alone does not establish authenticity or quality.

For an expensive lot, look for Panama Geisha or T2722, a named producer and farm, plot or lot, harvest, process, and transparent competition or genetic-verification details where claimed. Prestige should increase the evidence burden, not lower it.

Does coffee variety determine flavor?

Variety affects flavor, but it does not determine flavor by itself.

A peer-reviewed review on the influence of genotype and environment on coffee quality describes both genetic and environmental regulation of quality-related metabolism. Research on tree management and environmental conditions found that shade, nitrogen, fruit load, altitude, and genotype-environment interaction can affect physical and sensory quality.

The chain continues after picking. A study of 26 Arabica accessions under natural and washed processing found that genotype and process both shaped sensory expression. Research across an altitudinal gradient likewise found genotype-environment interactions in bean chemistry.

The practical conclusion is neither variety means nothing nor variety predicts the cup. It is:

Variety changes the range of possible outcomes. Production determines which outcome you receive.

Poor cherry selection can obscure genetic potential. Aggressive fermentation can dominate it. Stale green coffee, unsuitable roasting, or weak brewing can flatten it. Conversely, careful farming and processing can make a less fashionable variety compelling.

How to read a variety claim on a coffee bag

Use five questions.

1. How specific is the identity?

Arabica names a species. Geisha names a broad and sometimes ambiguous market identity. Panama Geisha T2722 is more specific. For mixed smallholder lots, the honest answer may be field blend or mixed local varieties.

2. Is the farm and lot traceable?

Look for producer, farm or cooperative, locality, plot or lot, harvest, and exporter or mill when relevant. The more expensive the coffee, the less satisfactory a floating variety name becomes.

3. Does the process have a real description?

Natural and washed are useful starting points. For experimental fermentation, look for time, temperature or control method, sealed or open conditions, and whether any non-coffee ingredients were added. Process can create a stronger sensory signal than variety.

4. Is the seller making a potential claim or a guarantee?

Known for high floral potential is defensible. Always tastes like jasmine is not. Precise claims acknowledge farm and processing conditions.

5. Can the premium be explained?

A premium may reflect low yield, difficult farming, selective picking, tiny lot size, competition results, exceptional cup quality, or verified genetics. Rare without documentation is a weak explanation.

WCR now publishes genetically confirmed seed lots that tested at high purity for sampled varieties. That program exists because plant identity is a supply-chain quality-control question, not merely a word printed on a bag.

A better way to taste varieties

If you want to learn variety character, avoid comparing random bags with different everything.

Start with two or more coffees that are as similar as possible in origin, producer, harvest, process, roast level, and roast age but differ in variety. Brew them with the same water, ratio, grinder, temperature, and method. Taste blind if possible.

Record acidity structure, sweetness, aroma, body, finish, and flavor descriptors. Repeat after cooling. Then reverse the experiment: compare the same variety across two origins or processes. The first comparison makes genetics easier to notice; the second demonstrates how much the production system changes expression.

Do not expect one tasting to reveal a permanent rule. Sensory learning improves by testing patterns across multiple lots.

Which coffee variety is best?

There is no universal winner.

  • A producer may value Caturra's compact architecture and established management system.
  • A buyer may seek SL28 for distinctive, high-potential Kenyan lots.
  • A roaster may choose Bourbon for a balance of familiarity, sweetness, and traceable farm supply.
  • A collector may pay for a tiny, rigorously documented Panama Geisha lot.
  • A breeder may prioritize disease resistance, yield stability, or climate adaptation over prestige.

The useful question is: best for which farm, market, roast, brew, budget, and sensory goal?

Frequently asked questions

Is varietal the same as variety?

In coffee conversation, people often use them interchangeably. In stricter usage, variety identifies the plant population or cultivar, while varietal is an adjective or a product made from a named variety. Coffee variety is the clearest general phrase.

Is Geisha the same as Gesha?

The spellings are commonly used for the same famous coffee, but the name can cover genetically distinct materials. Geisha follows historical research records; Gesha reflects the Ethiopian place-name spelling. Ask which accession or population the seller means.

Is SL28 always from Kenya?

No. It was selected in Kenya and remains closely associated with Kenyan coffee, but it has spread to other countries. A Kenyan origin label also does not prove a lot is SL28.

Can you identify a variety by taste?

Not reliably. Experienced tasters can form hypotheses, especially in controlled comparisons, but environment, processing, roast, and brewing can imitate or obscure expected traits. Documentation or genetic testing is stronger evidence.

Are Typica and Bourbon obsolete because they are disease susceptible?
